Secrets of the Perfect Pizza

Chef Matteo Bianchi shares his expert tips for crafting truly authentic pizza — even in your own kitchen:

1

Give the Dough Time

Flavor and texture develop slowly. Let your dough rest and ferment for at least 24 hours in a cool environment.

2

High Heat Matters

Preheat your oven to the highest setting (ideally above 250°C) and, if possible, bake on a pizza stone for a crisp, airy base.

3

Keep It Simple

Quality beats quantity. A few fresh, carefully chosen toppings create the most balanced and delicious pizza.

4

Choose the Right Flour

Use Italian type 00 flour, prized for its fine texture and essential for authentic Neapolitan-style dough.

5

Stretch by Hand

Skip the rolling pin. Gently stretch the dough by hand to preserve the edges and achieve a light, puffy crust.
